Mash Notes
2.5 gallons distilled; 1 tsp phos acid (mash); 3g each; mash water around 3.3ph initial strike ph 5.17. 100F at 5.2ph ez water estimated 5.4 room temp which turned out about exactly correct.


Boil Notes
Preboil gravity low, 1lb light dme added.


Fermentation Notes
Full 2L starter from day before, brought up to 5.75 gallons.

1/28 - 1oz centennial 
1/29 - 1oz each columbus & simcoe 
1/31 - 1oz centenial

Tasting Notes
BIG, bit boozy - not pliny but more like a triple. These bigger beers can def be dry hopped longer and take it. Brew again w/ 1056 and longer dry hop, no mosaic.  
 
Later: this is actually a solid dipa - just not the crushable pliny.
