Mash Notes
1.4g gypsum, might have been closer to 150 due to extreme cold.


Boil Notes
Forgot to add Whirlfloc.


Fermentation Notes
60F ambient by HVAC. Added clarity-ferm. 
Used harvested yeast from active maibock fermentation, around 100ml in jar of 550ml solution. Krausen on 2nd morning. Pooped out at 1.030ish, brought upstairs, got down to 1.022. Poured active 1L starter of 05 in. Finished at 16 or lower.


Packaging Notes
Speed carbed - 15psi for a few days, seemed to work well.


Tasting Notes
Needs less bitterness and more body. Maybe a bin thin - try mashing higher or boost crystal/add munich or special b, try an english yeast, less wheat, use CC instead of gypsum, etc.  
TOOK 3rd at BOSS 2011
